Vegan Banana Bread
This healthy cake substitute is an indispensable product in our everyday life at home!
All you need is:
1 tbsp ground flaxseed
3 tbsp water
250 g oats
150 g cashew nuts
1,5 tsp baking powder
1/3 tsp salt
a pinch of ground vanilla (optional: cinnamon)
3 ripe bananas
150 ml plant based milk
75 ml maple syrup
1 tbsp coconut oil
1 handful of chopped pecans
1 ripe banana sliced or halved lengthways
First preheat the oven to approx. 180 ° top and bottom heat.
To make a flax egg, mix one tablespoon ground flax seed with three tablespoons of water and let the mass sit to set up and thicken. During this process, oatmeal and cashew nuts are ground separately into flour in a blender. Now put all dry ingredients in a bowl and mix well.
Then pour all the liquid ingredients into the blender and mix well. The mass is now added to the dry ingredients and mixed well again. You add the flax egg last.
The dough can now be filled in a greased box mold or put in a greased muffin mold. Toppings can be distributed over it as desired.
Now bake for 45-50 minutes and let it cool.
